Ingredients
  

  • 1 pound Italian sausage mild or spicy
  • 4 –5 medium russet potatoes thinly sliced
  • 1 large onion diced
  • 3 –4 cloves garlic minced
  • 5 –6 cups chicken broth
  • 1 bunch kale stems removed and chopped
  • 1 cup heavy cream
  • 4 –6 slices bacon cooked and crumbled (optional)
  • 2 –3 tablespoons olive oil
  • Salt and black pepper to taste
  • Red pepper flakes optional, for heat

Method
 

  1. In a large pot, cook Italian sausage until browned. Remove and set aside.
  2. Heat olive oil in the same pot. Add onion and garlic, cook until soft and fragrant.
  3. Pour in chicken broth and add sliced potatoes. Simmer for 15–20 minutes until potatoes are tender.
  4. Stir in the cooked sausage and chopped kale. Cook for 3–5 minutes until kale is wilted.
  5. Reduce heat and stir in heavy cream. Season with salt, pepper, and red pepper flakes.
  6. Top with crumbled bacon before serving.
