Method
- Pat chicken dry with paper towels.
- Mix spices in a bowl and rub evenly over chicken.
- Stuff cavity with lemon wedges, onion, and garlic.
- Place chicken breast-side up in the crockpot.
- Cook on low for 6–7 hours or high for 4–5 hours, until internal temperature reaches 165°F (74°C).
- Optional: Transfer to a baking sheet and broil 3–5 minutes for crispy skin.
Notes
- Place carrots, celery, and potatoes at the bottom of the crockpot for an all-in-one meal.
- Save the juices for gravy or homemade broth.
- For extra flavor, rub softened garlic butter under the chicken skin before cooking.
