Ingredients
  

  • 1 whole chicken 4–5 pounds
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 lemon cut into wedges
  • 1 onion quartered
  • 4 garlic cloves smashed
  • Fresh herbs optional: rosemary, parsley

Method
 

  1. Pat chicken dry with paper towels.
  2. Mix spices in a bowl and rub evenly over chicken.
  3. Stuff cavity with lemon wedges, onion, and garlic.
  4. Place chicken breast-side up in the crockpot.
  5. Cook on low for 6–7 hours or high for 4–5 hours, until internal temperature reaches 165°F (74°C).
  6. Optional: Transfer to a baking sheet and broil 3–5 minutes for crispy skin.

Notes

  • Place carrots, celery, and potatoes at the bottom of the crockpot for an all-in-one meal.
  • Save the juices for gravy or homemade broth.
  • For extra flavor, rub softened garlic butter under the chicken skin before cooking.
