Thai-Inspired Lemongrass Marinade

Ingredients
  

  • 2 –3 stalks fresh lemongrass trimmed and finely minced
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 2 tablespoons fish sauce or soy sauce for vegetarian option
  • 2 tablespoons lime juice
  • 1 tablespoon brown sugar or palm sugar
  • 1 tablespoon vegetable oil or sesame oil
  • 1 –2 Thai chilies finely chopped (optional, for heat)
  • Freshly ground black pepper to taste

Method
 

  1. Remove the tough outer layers of lemongrass and finely chop the tender inner stalks.
  2. In a bowl, mix lemongrass, garlic, ginger, fish sauce, lime juice, sugar, oil, chilies, and black pepper.
  3. Coat your protein of choice (chicken, pork, beef, seafood, or tofu) with the marinade.
  4. Refrigerate and marinate for at least 30 minutes (2–4 hours for meats; 20–30 minutes for seafood).
  5. Cook by grilling, roasting, or pan-searing. Serve hot with jasmine rice or noodles.
