Method
- Remove the tough outer layers of lemongrass and finely chop the tender inner stalks.
- In a bowl, mix lemongrass, garlic, ginger, fish sauce, lime juice, sugar, oil, chilies, and black pepper.
- Coat your protein of choice (chicken, pork, beef, seafood, or tofu) with the marinade.
- Refrigerate and marinate for at least 30 minutes (2–4 hours for meats; 20–30 minutes for seafood).
- Cook by grilling, roasting, or pan-searing. Serve hot with jasmine rice or noodles.
