Teriyaki-Style Marinade

Ingredients
  

  • ½ cup soy sauce
  • 3 tbsp brown sugar or honey
  • 2 tbsp mirin or rice wine substitute apple juice if needed
  • 1 tbsp sesame oil
  • 2 cloves garlic minced
  • 1 tsp fresh ginger grated
  • Optional: 2 tbsp pineapple juice for sweetness and tenderizing

Method
 

  1. In a medium bowl, whisk together soy sauce, brown sugar, and mirin until sugar dissolves.
  2. Add sesame oil, garlic, ginger, and optional pineapple juice. Mix well.
  3. Place chicken, beef, salmon, tofu, or vegetables in a resealable bag or shallow dish.
  4. Pour marinade over, making sure everything is coated evenly.
  5. Refrigerate and marinate for at least 30 minutes. For deeper flavor, marinate 2–4 hours (fish: 30–60 minutes max).
  6. Cook as desired—grill, pan-sear, or bake. For a glaze, simmer leftover marinade for a few minutes until slightly thickened.

Notes

  • Use fresh ginger and garlic for the best flavor.
  • Avoid over-marinating fish—it only needs a short soak.
  • Pair with steamed rice and vegetables for a classic teriyaki meal.
