Ingredients
  

  • 2 large sweet potatoes peeled and cubed
  • 4 medium carrots peeled and chopped
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 tablespoon olive oil or butter
  • 4 cups vegetable broth or chicken broth
  • 1 teaspoon ground cumin optional
  • 1 teaspoon grated fresh ginger optional
  • Salt and black pepper to taste
  • ½ cup coconut milk or heavy cream
  • Fresh parsley or cilantro for garnish

Method
 

  1. Heat olive oil in a pot over medium heat.
  2. Sauté onion and garlic until fragrant.
  3. Add sweet potatoes and carrots, cook 5 minutes.
  4. Season with cumin, ginger, salt, and pepper.
  5. Pour in broth and bring to a boil.
  6. Reduce heat, simmer 20–25 minutes until vegetables soften.
  7. Blend until smooth using an immersion blender.
  8. Stir in coconut milk or cream.
  9. Taste and adjust seasoning.
  10. Serve warm, garnished with parsley or cilantro.
