- Heat olive oil in a pot over medium heat.

- Reduce heat, simmer 20–25 minutes until vegetables soften.
- Blend until smooth using an immersion blender.
- Stir in coconut milk or cream.
- Taste and adjust seasoning.
- Serve warm, garnished with parsley or cilantro.
