Watermelon, Feta & Mint Salad
  • 4 cups watermelon cubed
  • 1/2 cup feta cheese crumbled
  • 1/4 cup fresh mint leaves
  • Juice of 1 lime
  • Pinch of sea salt
Grilled Chicken Caesar Pasta Salad
  • 2 cups cooked pasta
  • 1 grilled chicken breast sliced
  • 2 cups romaine lettuce chopped
  • 1/4 cup Caesar dressing
  • Croutons and Parmesan cheese to taste
Strawberry Spinach Salad with Balsamic Glaze
  • 2 cups baby spinach
  • 1/2 cup strawberries sliced
  • 1/2 cup blueberries
  • 1/4 cup goat cheese
  • 1/4 cup chopped walnuts
  • Balsamic glaze to taste
Greek Chickpea Salad
  • 1 can chickpeas drained and rinsed
  • 1/2 cucumber diced

  • 1 cup cooked quinoa

  • 2 –3 heirloom tomatoes sliced

  • Olive oil and balsamic vinegar

  • 4 oz rice noodles cooked

  • Cilantro lime juice, salt & pepper
Peach & Burrata Salad
  • 2 peaches sliced
  • 1 burrata cheese ball
  • 2 cups arugula or mixed greens
  • 2 tbsp chopped almonds or pistachios
  • Balsamic reduction and honey optional
Cucumber, Dill & Yogurt Salad
  • 2 cucumbers thinly sliced
  • 1/2 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill chopped
  • 1 garlic clove minced (optional)
  • Salt and pepper

Method
 

Watermelon, Feta & Mint Salad
  1. Cut watermelon into cubes.
  2. Add feta cheese and mint leaves.
  3. Drizzle with lime juice and toss gently.
  4. Sprinkle sea salt and serve chilled.
Grilled Chicken Caesar Pasta Salad
  1. Cook pasta and cool.
  2. Grill chicken and slice.
  3. Combine pasta, chicken, lettuce, dressing, croutons, and Parmesan.
  4. Toss and serve
Strawberry Spinach Salad with Balsamic Glaze
  1. Combine spinach, strawberries, blueberries, goat cheese, and walnuts.
  2. Drizzle with balsamic
  3. glaze before serving

  2. Pour over cucumbers and toss well.
  3. Chill before serving.
