- 2 lbs russet potatoes
- 1/2 cup mayonnaise
- 2 tablespoons Greek yogurt or sour cream
- 1 –2 chipotle peppers in adobo minced
- 1 teaspoon lime juice
- 1/2 cup chopped green onions
- 2 hard-boiled eggs chopped
- Salt and pepper to taste
Boil and cube potatoes, then cool.
In a bowl, mix mayo, yogurt, chipotle, and lime juice.
Stir in potatoes, green onions, and chopped eggs.
