Ingredients
  

  • 2 carrots chopped
  • 2 parsnips chopped
  • 1 sweet potato cubed
  • 1 beet cubed
  • 1 red onion quartered
  • 2 tbsp olive oil
  • 1 tsp thyme or rosemary
  • Salt and pepper to taste

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Toss chopped vegetables with olive oil, herbs, salt, and pepper.
  3. Spread on a baking sheet and roast for 35–40 minutes, stirring halfway.
  4. Serve warm with honey or balsamic glaze if desired.
