Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
Place crushed chips in one bowl. In another, mix flour, garlic powder, paprika, and pepper. In a third bowl, beat the eggs.
Coat chicken in flour, dip in egg, then press into the crushed chips until fully coated.
Arrange coated chicken on the baking sheet. Lightly spray with cooking spray or drizzle with melted butter.
Bake for 20–25 minutes, or until chicken reaches 165°F (74°C) and coating is golden brown.
Rest for 5 minutes, then serve with your favorite dipping sauce.
