Method
- Season the pork loin with salt, pepper, thyme, and rosemary.
- In a skillet, heat olive oil and sear the pork on all sides until golden.
- Place onion and garlic at the bottom of the crockpot.
- Lay pork loin on top, then pour in chicken broth, soy sauce, and balsamic vinegar.
- Cover and cook on LOW for 6–8 hours, until the pork reaches 145°F (63°C).
- Remove, rest for 10 minutes, then slice and serve with the juices.
