Ingredients
  

  • 1 3–4 lb pork loin
  • 4 cloves garlic minced
  • 1 onion sliced
  • 1 cup chicken broth
  • 2 tbsp olive oil
  • 1 tbsp soy sauce
  • 1 tbsp balsamic vinegar
  • 1 tsp dried thyme
  • 1 tsp rosemary
  • Salt and black pepper to taste

Method
 

  1. Season the pork loin with salt, pepper, thyme, and rosemary.
  2. In a skillet, heat olive oil and sear the pork on all sides until golden.
  3. Place onion and garlic at the bottom of the crockpot.
  4. Lay pork loin on top, then pour in chicken broth, soy sauce, and balsamic vinegar.
  5. Cover and cook on LOW for 6–8 hours, until the pork reaches 145°F (63°C).
  6. Remove, rest for 10 minutes, then slice and serve with the juices.
