Season pork chops with salt, pepper, paprika, and thyme.
(Optional) Heat olive oil in a skillet and sear pork chops for 2–3 minutes on each side until browned.
Place sliced onions and garlic in the bottom of the crock pot.
Lay pork chops on top of the onions.
In a bowl, mix cream of mushroom soup and chicken broth. Pour over the pork chops.
Cover and cook on low for 6–7 hours or high for 3–4 hours, until pork chops are tender.
Serve hot with mashed potatoes, rice, or noodles, topped with the creamy gravy.
