Making pork chops in the crock pot is an easy way to get tender, flavorful meat with a rich gravy, perfect for serving over mashed potatoes, rice, or noodles.

Ingredients
  

  • 4 –6 bone-in or boneless pork chops
  • 1 can cream of mushroom soup 10.5 oz
  • 1 cup chicken broth
  • 1 medium onion sliced
  • 2 –3 cloves garlic minced
  • 1 tsp paprika
  • 1 tsp dried thyme or rosemary
  • Salt and pepper to taste
  • 2 tbsp olive oil optional, for searing

Method
 

  1. Season pork chops with salt, pepper, paprika, and thyme.
  2. (Optional) Heat olive oil in a skillet and sear pork chops for 2–3 minutes on each side until browned.
  3. Place sliced onions and garlic in the bottom of the crock pot.
  4. Lay pork chops on top of the onions.
  5. In a bowl, mix cream of mushroom soup and chicken broth. Pour over the pork chops.
  6. Cover and cook on low for 6–7 hours or high for 3–4 hours, until pork chops are tender.
  7. Serve hot with mashed potatoes, rice, or noodles, topped with the creamy gravy.
