Preheat oven to 350°F (175°C) and line a 9x5-inch loaf pan with parchment paper.
Mash bananas in a large bowl until smooth.
Add eggs, honey (or maple syrup), coconut oil, and vanilla. Whisk well.
Stir in oat flour, baking soda, baking powder, cinnamon, and salt. Mix until just combined.
Fold in nuts or chocolate chips if using.
Pour batter into the loaf pan and bake for 45–55 minutes, until a toothpick inserted in the center comes out clean.
Cool for 10 minutes in the pan, then transfer to a wire rack. Slice and enjoy!
