Ingredients
  

  • 1 lb dried northern beans soaked overnight
  • 1 onion chopped
  • 3 garlic cloves minced
  • 2 tbsp olive oil or butter
  • 6 cups chicken or vegetable broth
  • 1 bay leaf
  • 1 tsp dried thyme
  • 1 tsp smoked paprika
  • Salt and black pepper to taste
  • Optional: ham hock smoked turkey, or diced ham

Method
 

  1. Rinse and soak beans overnight (or quick soak for 1 hour). Drain.
  2. In a large pot, heat oil and sauté onion until soft. Add garlic.
  3. Stir in beans, broth, bay leaf, thyme, paprika, salt, and pepper.
  4. Bring to a boil, then reduce heat. Cover and simmer 1 ½ – 2 hours until beans are tender.
  5. Remove bay leaf, adjust seasoning, and serve warm.
