Ingredients
  

  • 2 cups of mixed beans canned or pre-cooked dry beans
  • 2 tablespoons olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 medium tomato chopped
  • 1 carrot diced
  • 1 bell pepper chopped
  • 1 teaspoon paprika
  • ½ teaspoon cumin
  • Salt and pepper to taste
  • 2 cups vegetable or chicken broth
  • Fresh parsley or cilantro for garnish

Method
 

  1. Heat olive oil in a large pan over medium heat.
  2. Add the chopped onion and garlic. Sauté until soft and fragrant.
  3. Stir in the carrot and bell pepper. Cook for 3–4 minutes.
  4. Add the tomato, paprika, and cumin. Mix well and let it cook until the tomato softens.
  5. Add the mixed beans and stir everything together.
  6. Pour in the broth and bring to a gentle boil.
  7. Reduce the heat and simmer for 15–20 minutes, allowing the flavors to blend.
  8. Season with salt and pepper to taste.
  9. Garnish with fresh parsley or cilantro before serving.
