Ingredients
  

  • 1 cup dried lentils green or brown, rinsed
  • 2 tablespoons olive oil
  • 1 onion finely chopped
  • 2 garlic cloves minced
  • 2 carrots diced
  • 2 celery stalks diced
  • 6 cups vegetable or chicken broth
  • 1 teaspoon cumin powder
  • 1 teaspoon paprika
  • Salt and black pepper to taste
  • 4 cups fresh spinach leaves
  • Juice of 1 lemon optional

Method
 

  1. Heat olive oil in a pot, add onion, carrots, and celery. Cook until soft.
  2. Stir in garlic, cumin, and paprika. Cook for 1 minute.
  3. Add lentils and broth. Bring to a boil, then simmer 25–30 minutes until lentils are tender.
  4. Season with salt and pepper.
  5. Stir in spinach and cook until wilted.
  6. Add lemon juice before serving.
  7. ✨ Serve hot with crusty bread for a complete, hearty meal.
