Ingredients
  

  • 1/4 cup freshly squeezed lemon juice (about 2 lemons)
  • 1/2 cup extra virgin olive oil
  • 1 teaspoon  Dijon mustard
  • 1 teaspoon  honey or maple syrup (optional for a touch of sweetness)
  • 1 clove  garlic, minced
  • Salt  freshly ground black pepper, to taste

Method
 

  1. Whisk base ingredients – Combine lemon juice, Dijon mustard, honey (optional), and minced garlic until smooth.
    Add oil slowly – Drizzle in olive oil while whisking to emulsify the dressing.
    Season – Add salt and pepper, then adjust flavor with more lemon juice, honey, or oil if needed.
    Store – Keep in a sealed jar in the fridge for 5–7 days, shaking before use.
