Pat pork chops dry and season both sides with salt and pepper.
Heat olive oil in a skillet over medium-high heat. Sear pork chops for 3–4 minutes per side until golden brown. Remove and set aside.
Lower heat to medium. Add garlic and sauté for 30 seconds.
Stir in honey, soy sauce, and vinegar. Simmer for 2–3 minutes until slightly thickened.
Return pork chops to the skillet. Spoon glaze over them and cook 3–5 minutes until internal temp reaches 145°F (63°C).
Garnish with parsley and serve hot with extra glaze.
