honey garlic chicken crock pot

Ingredients
  

  • 2 lbs boneless skinless chicken thighs (or chicken breasts)
  • ½ cup honey
  • ½ cup low-sodium soy sauce
  • ¼ cup ketchup
  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • 1 tsp ground ginger or 1 tbsp fresh ginger, grated
  • ½ tsp crushed red pepper flakes optional
  • 2 tbsp cornstarch
  • 2 tbsp water
  • Sesame seeds & chopped green onions for garnish

Method
 

  1. In a bowl, whisk together honey, soy sauce, ketchup, olive oil, garlic, ginger, and red pepper flakes.
  2. Place chicken in the crock pot and pour sauce over the top.
  3. Cover and cook on low 6–7 hours or high 3–4 hours, until chicken is tender.
  4. Mix cornstarch and water in a small bowl, then stir into sauce 20 minutes before serving to thicken.
  5. Shred chicken with two forks or serve whole.
  6. Garnish with sesame seeds and green onions. Serve hot over rice or noodles.
