Ingredients
  

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup granulated sugar
  • 1 cup milk whole or low-fat
  • 1 large egg
  • ¼ cup melted butter or vegetable oil
  • 1 teaspoon vanilla extract
  • Optional add-ins: 1 cup blueberries, chocolate chips, chopped nuts, or diced apples

Method
 

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, baking powder, salt, and sugar.
  3. In another bowl, whisk milk, egg, melted butter, and vanilla extract until smooth.
  4. Pour wet ingredients into dry ingredients. Stir gently until just combined (do not overmix).
  5. Fold in your choice of add-ins, if using.
  6. Scoop batter into muffin cups, filling each about ¾ full.
  7. Bake for 18–20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool on a wire rack before serving warm or storing.

Notes

  • Do not overmix the batter—lumpy is okay.
  • Use room temperature ingredients for the best results.
  • Store muffins in an airtight container for up to 3 days, or freeze for up to 3 months.
