Clean & Prep
- Rinse figs, remove stems.
- Halve large figs; leave small ones whole.
Combine
- In a large pot, add figs, sugar, water, lemon juice, and zest.
- Optional: add cinnamon stick for warm spice.
Simmer
- Bring to gentle simmer over medium heat, stirring until sugar dissolves.
- Reduce heat; cook uncovered 45–60 minutes until soft, glossy, and thickened.
Jar & Store
- Remove cinnamon stick (if used).
- Spoon hot preserves into sterilized jars, seal, and cool.
- Store in fridge up to 1 month or process in water bath for longer shelf life.
