- 2 lbs red potatoes
- 4 strips of bacon chopped
- 1/2 cup chopped onion
- 1/4 cup apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon sugar
- 2 hard-boiled eggs sliced or chopped
- Salt and pepper
- Fresh parsley for garnish
Boil potatoes until tender, then slice while warm.
Cook bacon until crisp; remove and set aside.
