Ingredients
  

For the Cookie Base
  • 1 cup unsalted butter softened
  • 1 ½ cups granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 2 ¾ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
For the Frosting
  • 8 oz cream cheese softened
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
For the Toppings (choose any combination)
  • Strawberries sliced
  • Blueberries
  • Kiwi peeled, sliced
  • Mandarin oranges
  • Raspberries
  • Grapes halved
  • Pineapple chopped

Method
 

Make the Cookie Crust
  1. Preheat oven to 350°F (175°C).
  2. Cream butter and sugar until light and fluffy.
  3. Beat in egg and vanilla.
  4. In a separate bowl, whisk flour, baking powder, and salt. Gradually add to wet ingredients until combined.
  5. Press dough into a greased 12-inch pizza pan. Bake 15–18 minutes or until lightly golden. Cool completely.
Prepare the Frosting
  1. Beat cream cheese, powdered sugar, and vanilla until smooth.
  2. Frost the cooled cookie crust.
Arrange the Fruit
  1. Decorate with sliced fruit in desired pattern
Chill and Serve
  1. Refrigerate for at least 30 minutes before slicing.
  2. Serve cold with a sharp knife or pizza cutter.

  • Use fresh, seasonal fruit for best flavor.
  • Pat fruit dry to prevent sogginess.
