These Eyeball Caprese Skewers bring a spooky twist to the classic Caprese salad. Made with mozzarella “eyeballs,” cherry tomatoes, and basil, they’re a quick, healthy, and hauntingly fun Halloween appetizer!

Ingredients
  

  • 1 pint cherry or grape tomatoes
  • 12 mini mozzarella balls bocconcini or ciliegine
  • 12 fresh basil leaves
  • 6 black olives pitted and sliced into rounds
  • 2 tbsp extra virgin olive oil
  • 1 –2 tbsp balsamic glaze or reduction
  • Salt and black pepper to taste
  • 12 toothpicks or small skewers

Method
 

Make the eyeballs:
  1. Slice a small flat spot on each mozzarella ball. Press a black olive slice into the center to form an “iris.”
Assemble the skewers:
  1. Thread one cherry tomato, one basil leaf, and one mozzarella “eyeball” onto each toothpick or skewer.
Season and drizzle:
  1. Place all skewers on a platter. Drizzle lightly with olive oil and balsamic glaze. Sprinkle salt and pepper over the top.
Serve and enjoy:
  1. Keep chilled until ready to serve. Arrange on a spooky platter for a fun Halloween presentation!

Notes

  • For extra spooky vibes, drizzle a bit more balsamic glaze around the platter for a “bloody” look.
