Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup whole wheat flour
  • 1 cup rolled oats plus 2 tbsp for topping
  • 2 tbsp honey or brown sugar
  • 2 tbsp olive oil or melted butter
  • 2 tsp instant yeast
  • 1 ½ tsp salt
  • 1 ¼ cups warm water
  • ¼ cup warm milk

Method
 

  1. Mix warm water, warm milk, honey, and yeast; let sit until foamy.
  2. Stir in olive oil, oats, whole wheat flour, and salt. Gradually add all-purpose flour.
  3. Knead dough for 8–10 minutes until smooth.
  4. Place in oiled bowl, cover, and let rise until doubled (1–1.5 hours).
  5. Punch down, shape into a loaf, and place in greased loaf pan. Sprinkle oats on top. Let rise 30–40 minutes.
  6. Bake at 375°F (190°C) for 30–35 minutes until golden and hollow-sounding.
  7. Cool on a wire rack before slicing.
