Ingredients
  

  • 3 –4 lb beef chuck roast
  • 1 tbsp olive oil
  • 1 large onion sliced
  • 4 garlic cloves minced
  • 4 carrots cut into chunks
  • 3 –4 potatoes cut into chunks
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 2 tsp dried thyme
  • 1 tsp rosemary
  • Salt and pepper to taste

Method
 

  1. Brown the roast (optional): Heat olive oil in a skillet and sear the beef on all sides, 3–4 minutes each.
  2. Layer the crockpot: Add onions, carrots, and potatoes to the bottom. Place the roast on top.
  3. Add flavor: Sprinkle with thyme, rosemary, salt, and pepper. Add garlic.
  4. Pour liquids: Add beef broth and Worcestershire sauce.
  5. Cook: Cover and cook on low for 8–10 hours or high for 5–6 hours, until beef is fork-tender.
  6. Serve: Shred roast and serve with vegetables and broth as gravy.
