Method
- Brown the roast (optional): Heat olive oil in a skillet and sear the beef on all sides, 3–4 minutes each.
- Layer the crockpot: Add onions, carrots, and potatoes to the bottom. Place the roast on top.
- Add flavor: Sprinkle with thyme, rosemary, salt, and pepper. Add garlic.
- Pour liquids: Add beef broth and Worcestershire sauce.
- Cook: Cover and cook on low for 8–10 hours or high for 5–6 hours, until beef is fork-tender.
- Serve: Shred roast and serve with vegetables and broth as gravy.
