Crock Pot Apple Crisp

Ingredients
  

  • 6 cups apples peeled, cored, and sliced – I like Granny Smith + Honeycrisp
  • 2 tablespoons lemon juice
  • 1/4 cup granulated sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • Pinch of salt
For the Topping:
  • 1 cup old-fashioned oats
  • 3/4 cup all-purpose flour
  • 1/2 cup brown sugar packed
  • 1/2 teaspoon cinnamon
  • 1/2 cup cold unsalted butter cubed
  • Optional: 1/2 cup chopped pecans or walnuts

Method
 

  1. Peel, core, and slice the apples. Place them in a large bowl and toss with lemon juice, sugar, cinnamon, nutmeg, and a pinch of salt.
  2. Spread the apple mixture evenly in the bottom of the crock pot.
  3. In a separate bowl, mix oats, flour, brown sugar, and cinnamon. Cut in the cold butter with a fork or pastry cutter until the mixture becomes crumbly. Stir in nuts if using.
  4. Sprinkle the topping evenly over the apples.
  5. Cover and cook on low for 3–4 hours or high for 2 hours, until apples are tender and bubbly.
  6. For a slightly crispier topping, prop the lid open slightly during the last 30 minutes of cooking.
  7. Serve warm with vanilla ice cream or whipped cream.
