- Peel the bananas and cut them into halves or thirds.
- In a bowl, mix flour, rice flour, sugar, baking powder, and salt.
- Add vanilla and water, then whisk into a smooth, thick batter.
- Heat oil in a deep pan until hot (about 350°F / 175°C).
- Dip each banana piece into the batter and coat evenly.
- Fry the bananas in hot oil until golden brown and crispy, about 2–3 minutes per side.
- Remove fritters with a slotted spoon and place on paper towels to drain excess oil.
- Serve hot with powdered sugar, honey, or your favorite topping.

- Choose the Right Bananas: Use ripe but firm bananas for the best flavor and texture. Overly mushy bananas may fall apart during frying.
- Keep the Oil Hot: Maintain a consistent oil temperature to avoid soggy fritters. If the oil is too cool, the batter will absorb more oil and lose its crispiness.
- Don’t Skip the Rice Flour: It’s the key to that extra crunch. If you don’t have rice flour, you can substitute with cornstarch, though the texture may be slightly different.
- Experiment with Flavors: Add a pinch of cinnamon or nutmeg to the batter for a warm, spiced flavor. You can also mix in shredded coconut for a tropical twist.
