Ingredients
  

For the Fritters:
  • 4 ripe bananas medium-sized, slightly soft but not mushy
  • 1 cup all-purpose flour
  • 1/4 cup rice flour for extra crispiness
  • 2 tablespoons sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/2 cup water adjust for batter consistency
  • Oil for deep frying vegetable or canola oil works well
Optional Toppings:
  • Powdered sugar
  • Honey or maple syrup
  • Cinnamon
  • Ice cream or whipped cream for an indulgent twist

Method
 

  1. Peel the bananas and cut them into halves or thirds.
  2. In a bowl, mix flour, rice flour, sugar, baking powder, and salt.
  3. Add vanilla and water, then whisk into a smooth, thick batter.
  4. Heat oil in a deep pan until hot (about 350°F / 175°C).
  5. Dip each banana piece into the batter and coat evenly.
  6. Fry the bananas in hot oil until golden brown and crispy, about 2–3 minutes per side.
  7. Remove fritters with a slotted spoon and place on paper towels to drain excess oil.
  8. Serve hot with powdered sugar, honey, or your favorite topping.

Notes

  • Choose the Right Bananas: Use ripe but firm bananas for the best flavor and texture. Overly mushy bananas may fall apart during frying.
  • Keep the Oil Hot: Maintain a consistent oil temperature to avoid soggy fritters. If the oil is too cool, the batter will absorb more oil and lose its crispiness.
  • Don’t Skip the Rice Flour: It’s the key to that extra crunch. If you don’t have rice flour, you can substitute with cornstarch, though the texture may be slightly different.
  • Experiment with Flavors: Add a pinch of cinnamon or nutmeg to the batter for a warm, spiced flavor. You can also mix in shredded coconut for a tropical twist.
