Ingredients
  

  • 4 pork chops bone-in or boneless, about 1-inch thick
  • 2 tbsp olive oil or butter
  • 8 oz fresh mushrooms sliced
  • 1 small onion finely chopped
  • 3 garlic cloves minced
  • 1 cup chicken broth
  • 1 cup heavy cream or half-and-half
  • 1 tbsp flour or cornstarch optional, for thickening
  • 1 tsp fresh thyme or ½ tsp dried thyme
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Method
 

  1. Season pork chops with salt and pepper.
  2. Heat oil in skillet, sear pork chops until golden brown, remove and set aside.
  3. Add mushrooms, onion, and garlic to skillet; cook until softened.
  4. Stir in chicken broth, scrape pan, then add cream. Simmer to thicken.
  5. Return pork chops, spoon sauce over, and simmer 5–7 minutes until cooked through.
  6. Garnish with parsley and serve hot with mashed potatoes, rice, or noodles.

Notes

  • For extra richness, add a splash of white wine when cooking the mushrooms.
  • Swap heavy cream with half-and-half for a lighter version.
  • Bone-in chops stay juicier, but boneless also works well.
