Ingredients
  

  • Ground beef – the star of the stew browned for rich flavor.
  • Onion & garlic – aromatic base for savory depth.
  • Potatoes – hearty and satisfying.
  • Carrots & corn – add sweetness and color.
  • Canned beans like pinto or kidney beans – protein-packed and filling.
  • Canned tomatoes – a tangy flavorful base.
  • Beef broth – keeps it rich and comforting.
  • Spices: chili powder paprika, cumin, salt, and pepper.
  • Optional: sliced smoked sausage for extra flavor.

Method
 

  1. In a large pot, cook the bacon until browned and crispy. Remove and set aside.
  2. Add the sausage to the bacon drippings and brown on both sides. Remove and set aside.
  3. Add the beef, onion, and garlic to the pot. Cook until the beef is no longer pink.
  4. Sprinkle the flour, salt, pepper, and chili powder over the beef. Stir and cook for 1 minute.
  5. Add the diced tomatoes, baked beans, green chilies, corn, and potatoes to the pot.
  6. Return the cooked bacon and sausage, then pour in the water. Stir to combine.
  7. Bring to a boil, then reduce the heat to low. Cover and simmer for 1 hour, stirring occasionally.

Notes

For extra spice, add jalapeños or a pinch of cayenne pepper.
Can substitute ground beef with ground turkey, chicken, or venison.
Leftovers taste even better the next day!
