Ingredients
  

  • 4 pork chops bone-in or boneless, about 1 inch thick
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 garlic cloves smashed
  • 2 –3 sprigs fresh thyme or rosemary
  • Salt and black pepper to taste

Method
 

  1. Pat pork chops dry with paper towels. Season with salt and black pepper.
  2. Heat olive oil in a skillet over medium-high heat until hot.
  3. Place pork chops in the pan and sear for 3–4 minutes per side until golden.
  4. Lower heat to medium. Add butter, garlic, and herbs to the pan.
  5. Tilt pan and spoon garlic butter over the pork chops for 1–2 minutes.
  6. Check internal temperature (145°F / 63°C). Cook longer if needed.
  7. Remove from pan and rest for 5 minutes. Serve with pan juices.
