Materials

  • 2 lbs Yukon Gold potatoes
  • 1 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1/2 cup diced celery
  • 1/4 cup chopped red onion
  • 2 tablespoons chopped dill pickles or relish
  • 3 hard-boiled eggs chopped
  • Salt and pepper to taste
  • Optional: paprika for garnish

Instructions

  • Boil potatoes until tender, about 15 minutes. Let cool, then dice.
  • Mix mayo, mustard, celery, onion, and pickles in a large bowl.
