- 2 lbs Yukon Gold potatoes
- 1 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1/2 cup diced celery
- 1/4 cup chopped red onion
- 2 tablespoons chopped dill pickles or relish
- 3 hard-boiled eggs chopped
- Salt and pepper to taste
- Optional: paprika for garnish
Boil potatoes until tender, about 15 minutes. Let cool, then dice.
