Ingredients
  

For Pancakes:
  • 1 ½ cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup buttermilk or milk + 1 tsp lemon juice
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
For Cinnamon Swirl:
  • 4 tablespoons unsalted butter melted
  • cup brown sugar packed
  • 1 tablespoon ground cinnamon
For Cream Cheese Glaze:
  • 2 ounces cream cheese softened
  • 2 tablespoons butter softened
  • ½ cup powdered sugar
  • ½ teaspoon vanilla extract
  • 2 –3 tablespoons milk adjust for consistency

Method
 

  1. Mix cinnamon swirl ingredients and put into a piping bag.
  2. Whisk together cream cheese glaze ingredients until smooth, set aside.
  3. In a bowl, mix flour, sugar, baking powder, baking soda, and salt.
  4. In another bowl, whisk buttermilk, egg, melted butter, and vanilla.
  5. Combine wet and dry ingredients; stir gently until just mixed.
  6. Heat skillet or griddle, lightly grease, and pour ¼ cup batter for each pancake.
  7. When bubbles form, pipe a cinnamon swirl on top.
  8. Flip pancake carefully and cook until golden brown.
  9. Stack pancakes and drizzle with cream cheese glaze.
