Chicken and Veggie Tater Tot Casserole Recipe

Ingredients
  

For the Filling
  • 3 cups cooked chicken shredded or diced (rotisserie works great)
  • 2 tablespoons butter
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 cup frozen mixed vegetables peas, carrots, corn, green beans
  • 1 can 10 oz cream of chicken soup
  • ½ cup sour cream
  • ½ cup milk
  • 1 cup shredded cheddar cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
For the Topping
  • 1 32 oz bag frozen tater tots
  • ½ cup shredded cheddar cheese for topping
  • Chopped parsley or green onions for garnish optional

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. Grease a 9x13-inch baking dish with cooking spray or butter.
  3. Melt butter in a large skillet over medium heat.
  4. Add chopped onion and cook until soft.
  5. Stir in minced garlic and cook for 1 minute.
  6. Add the mixed vegetables and cook for 2–3 minutes.
  7. Stir in cream of chicken soup, sour cream, and milk.
  8. Add shredded chicken, salt, pepper, and 1 cup of cheese. Mix well.
  9. Pour the chicken mixture into the baking dish and spread evenly.
  10. Arrange tater tots in a single layer on top.
  11. Sprinkle the remaining cheese over the tater tots.
  12. Bake uncovered for 35–40 minutes, or until the top is golden and crispy.
  13. Let the casserole rest for 5 minutes before serving.
  14. Garnish with parsley or green onions if desired.
