Breakfast Burrito Recipe

Ingredients
  

  • 4 large flour tortillas 10-inch
  • 6 large eggs
  • 1 tablespoon milk optional
  • 1 cup cooked sausage bacon, or chorizo
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 cup diced potatoes or hash browns cooked crispy
  • ½ cup diced bell peppers
  • ½ cup diced onions
  • 1 tablespoon olive oil or butter
  • Salt & pepper to taste
  • Salsa guacamole, or sour cream for serving

Method
 

  1. Cook the veggies & potatoes: Heat oil in a skillet. Sauté onions and peppers until soft, then add potatoes and cook until golden. Set aside.
  2. Cook the meat: In the same pan, cook sausage, bacon, or chorizo until browned. Remove and set aside.
  3. Scramble the eggs: Whisk eggs with milk, salt, and pepper. Cook over low heat, stirring until soft and fluffy.
  4. Assemble the burritos: Lay a tortilla flat, add eggs, potatoes, meat, veggies, and cheese. Fold the sides in and roll tightly.
  5. Toast (optional): Place seam-side down in a skillet for 1–2 minutes per side until golden.
  6. Serve: Slice in half and serve warm with salsa or guacamole.

Notes

Variations:

  • Vegetarian: Swap meat for black beans or grilled mushrooms.
  • Healthy: Use whole-wheat tortillas and spinach instead of potatoes.
  • Spicy: Add jalapeños or hot sauce.
  • Freezer-friendly: Wrap cooled burritos in foil, freeze, and reheat when needed.
