Cook the veggies & potatoes: Heat oil in a skillet. Sauté onions and peppers until soft, then add potatoes and cook until golden. Set aside.
Cook the meat: In the same pan, cook sausage, bacon, or chorizo until browned. Remove and set aside.
Scramble the eggs: Whisk eggs with milk, salt, and pepper. Cook over low heat, stirring until soft and fluffy.
Assemble the burritos: Lay a tortilla flat, add eggs, potatoes, meat, veggies, and cheese. Fold the sides in and roll tightly.
Toast (optional): Place seam-side down in a skillet for 1–2 minutes per side until golden.
Serve: Slice in half and serve warm with salsa or guacamole.
