Season chicken with olive oil, paprika, salt, and pepper.
(Optional) Sear chicken in a skillet for 2–3 minutes on each side for extra flavor.
Place potatoes, carrots, onions, and celery in the bottom of a crockpot or baking dish. Add garlic and herbs.
Lay the chicken on top of the vegetables.
Pour chicken broth evenly over everything.
For Crockpot: Cook on low 6–7 hours or high 3–4 hours.
For Oven: Cover with foil and bake at 375°F (190°C) for 60–75 minutes until chicken reaches 165°F internal temp.
Garnish with fresh parsley and serve hot.
