Ingredients
  

  • 4 bone-in skin-on chicken thighs (or chicken breast)
  • 3 medium carrots sliced
  • 3 medium potatoes cubed
  • 1 onion chopped
  • 2 celery stalks chopped
  • 4 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon dried rosemary or fresh sprigs
  • 1 teaspoon thyme
  • 1 cup chicken broth
  • Salt and black pepper to taste

Method
 

  1. Season chicken with olive oil, paprika, salt, and pepper.
  2. (Optional) Sear chicken in a skillet for 2–3 minutes on each side for extra flavor.
  3. Place potatoes, carrots, onions, and celery in the bottom of a crockpot or baking dish. Add garlic and herbs.
  4. Lay the chicken on top of the vegetables.
  5. Pour chicken broth evenly over everything.
  6. For Crockpot: Cook on low 6–7 hours or high 3–4 hours.
  7. For Oven: Cover with foil and bake at 375°F (190°C) for 60–75 minutes until chicken reaches 165°F internal temp.
  8. Garnish with fresh parsley and serve hot.

Notes

  • Swap potatoes for sweet potatoes or parsnips for a different twist.
  • Add green beans or peas in the last 30 minutes for extra color.
  • Leftovers store well in the fridge for up to 3 days.
