Ingredients
  

  • 2 lbs ground beef or turkey/chicken
  • 1 large onion diced
  • 3 cloves garlic minced
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 2 cans 15 oz diced tomatoes
  • 2 cans 15 oz kidney beans, drained & rinsed (optional)
  • 3 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 cup beef broth
  • 2 tbsp olive oil

Method
 

  1. Heat olive oil in a Dutch oven, then sauté onion, garlic, and peppers until softened.
  2. Add ground beef and cook until browned; drain excess fat.
  3. Stir in chili powder, cumin, paprika, salt, and pepper.
  4. Add diced tomatoes, beans (if using), and beef broth. Mix well.
  5. Reduce heat, cover, and simmer for at least 30 minutes (longer for deeper flavor).
  6. Serve hot with toppings like cheese, sour cream, green onions, or tortilla strips.
