Ingredients
  

  • 300 g 10 oz beef (flank steak or sirloin), thinly sliced
  • 2 tsp soy sauce
  • 1 tsp oyster sauce
  • 1 tsp cornstarch
  • ½ tsp sesame oil
  • 200 g 7 oz chow mein noodles
  • 4 tbsp vegetable oil divided
  • 1 onion sliced
  • 1 red bell pepper sliced
  • 1 small carrot julienned
  • 1 cup bean sprouts
  • 2 cloves garlic minced
  • 2 green onions chopped
Sauce:
  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 1 tsp sugar
  • ½ cup beef broth
  • 2 tsp cornstarch + 3 tbsp water slurry

Method
 

  1. Marinate beef with soy sauce, oyster sauce, cornstarch, and sesame oil. Rest for 15 minutes.
  2. Cook noodles, drain, then pan-fry in oil until crispy on both sides. Set aside.
  3. Stir-fry beef in a hot wok until browned. Remove.
  4. Stir-fry onion, bell pepper, carrot, and garlic for 2–3 minutes. Add bean sprouts and half the green onions.
  5. Mix sauce ingredients, add to wok, and thicken with cornstarch slurry.
  6. Return beef to wok, toss everything together.
  7. Serve over crispy noodles and garnish with remaining green onions.
