These balsamic glazed carrots are both healthy and delicious.

Ingredients
  

  • 1 lb carrots peeled
  • 1 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey or maple syrup
  • Salt and pepper to taste

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Toss carrots with olive oil, balsamic vinegar, honey, salt, and pepper.
  3. Roast for 20–25 minutes, stirring halfway.
  4. Drizzle with reduced glaze if desired.
  5. Serve warm with parsley garnish.
