Ingredients
  

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter plus extra for cooking
  • 6 –8 slices bacon cooked crispy and chopped
  • Optional: maple syrup honey, or butter for serving

Method
 

  1. Cook the bacon until crispy, then chop into small pieces.
  2. In a bowl, mix flour, sugar, baking powder, and salt.
  3. In another bowl, whisk milk, egg, and melted butter.
  4. Combine wet and dry ingredients; stir gently.
  5. Fold half the bacon into the batter, save the rest for topping.
  6. Heat a skillet, add butter, and pour ¼ cup batter for each pancake.
  7. Cook until bubbles form, flip, and cook until golden brown.
  8. Stack, sprinkle with bacon, and drizzle with syrup or honey.
