Ingredients
  

For the Salad:
  • 2 Honeycrisp apples thinly sliced
  • 6 cups mixed salad greens arugula, spinach, or spring mix
  • ½ cup feta cheese crumbled
  • ½ cup toasted pecans or walnuts
  • ¼ cup dried cranberries or pomegranate seeds
  • 2 tablespoons pumpkin seeds optional
For the Dressing:
  • ¼ cup extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Method
 

  1. Wash and thinly slice the Honeycrisp apples. Toss with lemon juice if desired to prevent browning.
  2. Place salad greens in a large serving bowl or platter.
  3. Arrange apple slices, feta, toasted nuts, cranberries, and pumpkin seeds over the greens.
  4. In a jar, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper until smooth.
  5. Drizzle the dressing over the salad just before serving. Toss lightly and enjoy!

Notes

  • Add grilled chicken, turkey, or salmon for a complete meal.
  • Swap feta with goat cheese or blue cheese for a flavor twist.
  • For nut-free, replace nuts with sunflower seeds or roasted chickpeas.
  • Keep ingredients separate if making ahead; dress only before serving.
